Creating a New Cycle: Redefining Hospitality

Dusty Grable shared his thoughts on the importance of “cycle” in the hospitality industry. Early in his career, Dusty received advice to “embrace the revolving door of employees in our industry,” but this never sat well with him. He saw his young, hardworking employees as more than just replaceable resources. The idea of “don’t invest too much” felt like a contribution to a flawed cycle—one he was determined to break. Dusty reflected on how pivotal the hospitality industry can be for so many people, often shaping them during critical developmental stages. Recognizing this, he views hospitality not just as a business but as a privilege and responsibility to impact society positively. To him, this chapter in a person’s life matters deeply, and he believes in treating young employees with respect and accountability, striving to foster their growth rather than simply replacing them. Looking back on his career, Dusty hopes his legacy will include changing the industry by rethinking how employees are treated and creating a new, positive cycle. This vision inspired him to start Lovers and Fighters, a company committed to sustainability, love, and a more meaningful approach to hospitality. Dusty also finds joy in discovering talented people and empowering them by giving them the space to succeed. His mentors—the ones he admires most—have been generous with their time and guidance, setting an example Dusty aims to follow as he continues to perpetuate a cycle of mentorship, respect, and growth in the industry.

About the speaker

Dusty Grable is a local boy and Kamehameha High School graduate. He has launched 8 successful restaurants, all of which remain open today.

After many years of experience from mom & pop joints to Michelin Star restaurants and luxury hotels, including Gary Danko and Ame in San Francisco, Dusty was led back to Honolulu. This is where he and his partner, Chef Jesse Cruz, created Breaking Bread Hospitality Group and opened Lucky Belly, Livestock Tavern, and The Tchin Tchin! Bar, paving the way in the growing appeal of Honolulu’s Chinatown.

In 2021 Dusty founded Lovers & Fighters, a hospitality, education, and leadership collective that helps build industry-leading, innovative hospitality venues that are dedicated to a new model for excellence. This year, Lovers & Fighters opened Uncle Paul's Corner Store, Little Plum, and, most recently, Lady Elaine in Mānoa Marketplace where they are excited and humbled to have been so kindly welcomed into the neighborhood.

Above all, Dusty’s consulting and education focuses on developing leaders in the hospitality industry and nurturing self-discovery, growth, and creativity. His award-winning work has been featured in Forbes, Honolulu Magazine, SFGate, Modern Luxury, Thrillist and more.
